Being a mom and working full time is hectic enough. The last thing I want to think about is slaving over a stove for hours to prepare a nutritious and yummy dinner for my family on a weekday. Quicker than ordering or taking out, this recipe is completed in UNDER 20 minutes, is packed with delicious flavor, and sure to appease even the most pickiest eaters (your kids)!
Take IN Chicken and Broccoli Stir Fry
1 to 2lbs boneless skinless chicken breasts cut into small chunks
2 to 3 tablespoons sesame oil
2 tablespoons garlic chopped
1 tablespoon fresh ginger chopped
2 green onions or scallions sliced
¼ teaspoon red pepper flakes
4 cups fresh chopped broccoli
½ cup chicken broth divided
3 tablespoons soy sauce
1. Heat large skillet over medium-high heat. Add about 2 tablespoons of sesame oil. Add scallions, garlic, and red pepper flakes. Cook for 30 seconds. Add broccoli florets and ¼ cup chicken broth. Stir fry broccoli for 2 minutes. Remove from skillet and set aside.
2. Add a little more sesame oil to skillet (about 1 tablespoon). Add chicken to the skillet and cook until chicken is fully cooked (about 5 minutes).
3. Add in remaining ¼ cup of chicken broth and soy sauce. Add broccoli mix well and cook until the mixture has become well heated.
This recipe can be adapted by swapping out ingredients and maintaining the method. You can add more veggies like carrots, mushrooms, or asparagus and swap out chicken for shrimp. The possibilities are infinite and tasty!
